Slow Bone. Giggle. Sorry, that name just gets me…let’s try this again.
Slow Bone is the barbecue brain child of Maple and Motor man Jack Perkins and M&M managers brother, Kyle Thornton. Located yonder off Irving Blvd near the Dallas Design District, this house of smoke can’t be missed due to “The Slow Bone” sign inside an eagles shape across the red building.

Step inside to a sunlit foyer and further into the main dining room where the chalk boarded menu and line await. Now, don’t get your undergarments knotted when you see the set up is modeled after the cafeteria lines of childhood.
Once you step up to the plate, those gentlemen waiting behind the lit food line will take good care of you. Decisions: 2 meats? 3 meats? sandwich? Go with the 2 meater (About $12) if it’s your first time. Jack’s famous Meat Fight winning brisket will do you right but choose wisely from smoked chicken, pulled chicken, baby back or St Louis style ribs even sausage if you please, including a jalapeño brat. Smoking wood of choice? Good ‘ole Hickory. Got your meat? Good. Slide your tray on down the line…
Theres nothing like a good veggie set up to satisfy that serving that comes so highly recommended, in between meaty bites. The Slow Bone lets you pick 2 sides to pair with your meat. Now lets see, there’s:
- Green Bean Casserole
- Sweet Potato Casserole
- Greens
- Pea Salad
- Potato Salad
- Baked Beans
- Roasted Brussels Sprouts and Cauliflower Casserole (YES!)
- Tomato and Cucumber Salad
- Green Chile Macaroni and Cheese
- Fried Okra
Whew. You’ll want a bite of ‘em all, I assure you. I went with the Sweet Potato and Roasted Brussels Sprouts/Cauliflower Casseroles and never looked back. Made fresh a few times a day, these aren’t your mommas side dishes. Jack quality controls these bad boys to perfection. Each meal comes with choice of (2)hushpuppies, jalapeño cornbread or biscuits.
There’s one more piece of the fun before you take your seat in the 90 seater dining hall. Hit the Slow Bone condiment cart. Loaded with pickled peppers and red onions, homemade chow chow and ‘Uncle Rob’ hot sauce it’s a must to spice up your meal.
Soda fountain stop. Find a table. Sit. Chow down.
