MAX’S gluten friendly Fried Chicken is made with a blend of gluten free flour and dried cauliflower fibers, which create a fried-like coating, and is served with mashed potatoes and collard greens. In order to maintain a high level of quality, the gluten friendly Fried Chicken is fried in a separate fryer and prepared in an independent area, where exposure to gluten is less likely to occur.
I know what you’re thinking, “Where’s the fat free fried chicken so that I can chow down endlessly on my favorite southern cooking and maintain my summer body?!”. Menu items include The Standard with pan-roasted half chicken served with golden raisins and pickled, roasted and pureed cauliflower; Yellow Squash Soup with creamy squash scented with saffron; and Bigeye Tuna with seared #1 Bigeye tuna, stone fruit jam, fingerling confit and salsa verde.
