Tre Wilcox Working on New Concept ‘Julia Pearl Southern Cuisine’

Word around the way is that celebrity chef and Dallas native Tre Wilcox is cooking up something extremely exciting. After doing a little bit of digging this morning, it seems that Wilcox will serve as ‘Culinary Director’ at new concept Julia Pearl Southern Cusine. A master at opening and serving as Executive Chef at prestigious restaurants in the Dallas, TX area, Tre Wilcox will bring a certain echelon to the kitchen. He has also appeared on various local and national TV shows to include Top Chef Seasons 3, Season 8 Top Chef All Stars, Iron Chef and The Talk. Wilcox will “provide expertise in culinary direction, menu development, recipe development, pricing, food cost, staff training and restaurant operations.”

From the look of it, Julia Pearl Southern Cuisine is in the development phase but seems to be raising funds to expedite the process. What will the food and ambiance be like? The website reads “Julia Pearl Southern Cuisine is a celebration of classic Southern Cooking community and life. It is a tribute to and inspired by the lives of two family Matriarchs Julia and Pearl. Growing up Southern is a life experience, set of ideals and values that crosses generational lines. It is also about the fond memories and being true to your roots, holding true to tradition, family and friends. Of all the memories, the ones that stand out the most are the smell of classic Southern cooking coming from the kitchen, the culture and hospitality around the dinner table.”

Julia Pearl is set to open in Plano located at 2301 North Central Expressway just off of US 75 sometime next year. Watch this space for more on Tre Wilcox and Julia Pearl!

Nick Jonas & Hilton Make Musical Memories

Last night, approximately 600 screaming fans descended on the Hilton Anatole in Dallas to watch pop superstar Nick Jonas take the stage. The private concert, a part of Hilton Worldwide “Hilton @Play” campaign, took Hilton HHonors awards points and turned them into an unforgettable experience for Jonas fans.

Hilton is setting out to inspire a new, healthier mindset – encouraging people to seek out the unfamiliar, to appreciate a different point of view and to learn from every day experiences and travel moments. That mission begins with the launch of “Hilton at Play,” a global campaign created to connect people with enriching and playful experiences. That’s where Nick Jonas comes into play.

HHonors awards members paid for the experience in points and then received the details of the concert. I’ll admit I didn’t know every single word, but the way Jonas crooned his way through ‘Take Over’, ‘Wilderness’ and hit song ‘Chains’ made me a believer. The ballroom turned concert hall was intimate and majestic as the pop star made his way through the hour long set. The Dallas native spoke few words to the crowd, but when he did the hoards of teen girls and grown women reached new, higher than Texas hair audio levels. Closing the evening with ‘Jealous’, Jonas kindly thanked those in attendance and those watch on social media live-streaming video app, Periscope, as well.

By setting a new precedent in travel experiences, Hilton has made its mark as a culture force to be reckoned with.

Grammy Guys Sing in Style

Before all the star performances and awards could be given away, the red carpet rolled out and so did the dapper styles. I’ve given a lot of thought to my top picks for the best dressed men last night, and I hope you’ll choose to agree or rightfully disagree with the ones that rose above the rest.

Sam Smith swept the ceremony with an allotment of prizes for his soulful ‘In the Lonely Hour‘ album. Smith continues to be a favorite of mine and last night he went classic with three different suits (the white tie he wore for his entrance; the cherry red he wore to receive his first award; and the blue plaid he finished up with). John Mayer and Childish Gambino followed suit (pun intended) with classic tux looks as well, Childish Gambino takes my favorite though with a sock-less ensemble.

Aloe Blacc played into a trend I saw across the lot of outfits last night, blue. A deep shade of the cool color made his entire look pop and the hat was a classy tip to complete the act. Usher was also up for consideration last night with his greyscale get up. The R&B star rocked a Calvin Klein suit, Louis Leeman Paris shoes and Lorraine Schwartz bling.

My all-time favorite look of the evening though? Drum roll because this got a lot of yes and a few no.

Nick Jonas.

The youngest Jonas rocked a grey, canary and black paid suit courtesy of Versace. His slick backed hair, clean white shirt and simple watch accessory tied everything together and made me a believer in stepping outside the norm to make a statement. Well done, Nick.

Matt McCallister Set to Open Second Restaurant ‘Filament’ Spring 2015

ImageDallas’ Celebuchef favorite Matt McCallister, of FT33 in the Design District, is opening his second restaurant late this year. Here are the exciting details:

Matt McCallister, Chef/Owner of FT33, proudly announces his second restaurant, Filament. Filament will honor simply prepared ingredients of the South and is slated to open in Spring 2015 in Dallas’ Deep Ellum neighborhood.  Known for his naturalistic style and modern approach to seasonal fare at FT33, Chef McCallister’s Filament will hold true to the same philosophy, with a more casual approach to dining.

“The menu at Filament will be full of items that I eat on my own time. A couple of months ago I took a road trip with a couple members of my team and really thought about the food that is representative of our region,” says Chef McCallister. “Filament’s menu will be approachable, but not without the unexpected.  The menu I’m working on looks straightforward on paper, like Spicy Pork Sausage with fire roasted peppers, pickled onions, and yogurt.  There will be surprises, though.”

Filament’s large, horseshoe-shaped bar, which seats 24, will feature a selection curated by Managing Partner Jeff Gregory, who has created and maintains the award-winning beverage program at FT33. There will be a list of about 100 bottles of wine, a rotating lineup of craft beers on tap, and an inventive selection of seasonal cocktails.  An early look at the bar program hints at variations on the Julep, Sazerac, and Milk Punch, as well as an emphasis on use of preserved fruits.

The space was first an early 1900s machinist shop, and the restaurant will preserve parts of the original interior, including exposed brick walls and wooden beam ceilings. Filament’s industrial style fits with the vibe in Deep Ellum, a neighborhood known as a destination for local art, music, and more.

Filament, Chef Matt McCallister’s second Dallas restaurant will open for dinner in Spring 2015. The restaurant is located at 2626 Main Street in Dallas’ Deep Ellum neighborhood.”

‘Big Night, Big Table’ Creates a Cozy Community in Bishop Arts

What do you get when you pair 15 of Dallas’ top chefs, a 200 seater communal table and a beautiful evening? Big Night, Big Table. Last night, 200 guests converged on Bishop Arts to create an unforgettable evening for a great cause. The event was a family style dinner in the heart of Oak Cliff, featuring the Chefs of Bishop Arts. The cause? All proceeds go to Cafe Momentum and Reagan Elementary School.

We began with a Bacardi cocktail from Hattie’s served by Michael Martensen, and then we headed to the main drag to choose our seats. The table was elegantly set with vintage lighting pieces, white tablecloths and drinking vessels provide generously by Chefs for Farmers.

Six courses started with Rabbit Pâté with spicy mustard and frisée from David Uygur of Lucia. Each of the courses paired 2 of Bishop Arts’ best restaurants. Jon Stevens of Stock and Barrel served a smoked wagyu meatloaf that was incredibly moist and a bit spicy. Not pictured is a Texas road sign (literally) piled with brisket and sausage  from Lockhart Smokehouse.

Concluding the evening was an assortment from soon-to-open JOY Macarons, a delicious and not too sweet pumpkin pie trifle from Rush Patisserie and a special made Carrot Cake Chess Pie from Emporium Pies.

Cafe Momentum’s program teaches critical skills that allow youth to apply what they have been taught in pre-release programs in a safe, real-world environment of nurturing accountability. Cafe Momentums Executive Director, Chad Houser, will be featured on the Rachael Ray Show this Thursday, October 30th!

KitchenLTO 4.0 Naughty New Menu Needs Nice

The popular ‘permanent pop-up’ restaurant in Dallas, KitchenLTO in Trinity Groves, changes the concept and menu every four months. Recently former Dallas chef Blythe Beck, previously of The Mansion, Hector’s and now closed Central 214, took the helm at LTO. Beck brings with her a reputation of ‘naughty’ dishes that are by no means meant for dieting or healthy eating and everyone is aware of that. Artist Salma Gottfried brings a fresh feel to the space with canvases of Dallas local sights and scenes that bring local flare.

We had reservations later on Monday evening and our table of 4 remained one of 3 tables occupied in the full restaurant. I’ll attribute that to both patio options and Dallas’ lack of early week dining  out scene. The wine and cocktail list at KitchenLTO has seen an increase in bourbon and rye as well as rich wines to compliment Chef Becks heavy menu.  Classics like the Aviation and The LAST Word are now met by cheeky, sugary sips like Naughty Redhead and Sweet Tea Mojito. We decided on wine and moved on to the main menu. KitchenLTO provides diners the option to order a la carte or choose a 3 or 5-course tasting menu at $40 and around $60 respectively. Our table shared the “Southern Hospitality” ($14) starter. Something was off here between the luke warm Fried Oaxaca pieces, the tiny portion of pimento cheese and a sad pile of Prosciutto on the opposite side of the plate. For the name, one might expect a cornucopia of southern specials that could feed an army but after a few bites of each on crackers we were finished. Pressing on, this southern boy didn’t let the starters spoil the lot.

For mains, we sampled the Bacon Cheddar Meatloaf ($19), the Iceberg Babies ($8), Fall Butter Lettuce ($10) and half-portion Chicken Fried Ribeye ($21). First, the meatloaf is not to be missed. Decadent and sided with Brussels Sprout Petals, Pimento Mac N Cheese this isn’t your mamas meatloaf. However, the mac was similar to the previous cheese in its temperature nature. The ribeye is a cowboys portion with more than enough Naughty Creamed Corn and Bacon Redeye Gravy to go around. This won the table over. The salads were fine, with plenty of naughty touches like bacon and smoked pecan accents.  I had planned on ordering Maker’s Mark Banana Pudding, the waffle or butter cake but couldn’t quite bring our table to agreement that it was worth it this time. A first for me! I think given a fuller crowd and warmer dishes this place could hit all the right notes. For now, the naughty will need more nice.

Dallas native Skyler Fike knows a thing or two about photography. A look at his portfolio had me intrigued to learn more about the man behind the lens.

“After his undergraduate years, Skyler went on to study film, photography, and creative writing at the University of Self Education at Barnes and Noble, while attending evening classes Half Price Books and Amazon.com. This set him up for an impressive nose-dive into debt, and coincidentally diluting the hard-earned degree that his five years in architecture school afforded him.

Even so, a camera was purchased, books were torn through, the strange became familiar, and new things were learned. Before long, though, he discovered that the pursuit of multiple vocations didn’t necessarily mean the dilution of what was already learned and practiced. In fact, photography, writing, architecture, film, and a strict dedication to beer and/or whiskey breaks with friends on patios were all inseparable and entirely necessary to the process of understanding these things respectively.”

With a friendly disposition and a talent for capturing ‘the moment’ in a way I’ve never seen before, Skyler is bound for big things. His portrait work is stunning and effortlessly cool, heck he even made yours truly seem like a legitimate character (a steep feat!). His rolodex of talents knows no bounds and he offers varies services like photography, architectural design, creative pamphlet design, photography lessons and writing.
