Don’t know how this one slipped past my radar. The Joule Hotel is finally filling the basement with a ‘craft cocktail salon’ called Midnight Rambler. Guessing no relation to the Rolling Stones hit. The former PM Lounge space is being transformed into a swank subterranean speakeasy that’s sure to come with an air of high society. Recently, diners at the hotel restaurant CBD Provisions have been privy to testing out new ‘bar snacks’ like pretzel bites with house made mustard dipping sauce (pictured below).

After doing a little bit more digging, I was able to find a couple job listings (host, bartender and manager) that give a little more insight into what is in store for Midnight Rambler. Here’s what I found:
“Midnight Rambler, a craft cocktail salon, is opening in the basement of The Joule– a stylish and arts driven boutique hotel in the heart of downtown Dallas, TX. Conceived and operated by Chad Solomon & Christy Pope of Cuffs & Buttons. This is an exceptional opportunity for hosts who are outgoing and passionate about hospitality. Midnight Rambler will offer extensive training in a dynamic and creative environment. If you see yourself in the following description, Midnight Rambler would love to meet you…
· Energetic, engaging, intellectually curious
· Positive attitude, service minded, and able to work as a team player
· Able to take direction and adhere to standards
· Committed and passionate about on-going trainings, education, and continued elevated performance
· Adhere to the brand profile of Midnight Rambler
Qualified applicants should send resumes to info@midnightramblerbar.com along with answers to the following questions:
Favorite band?
What is your favorite Dallas restaurant and bar?
Who’s your favorite author or artist?
What’s your favorite movie (feel free to pick 1-3 options)?
What’s your favorite cocktail and why?”

There you have it. I’m not quite sure it’s much of a step up from the ‘Mirth & Refuge’ name it held before, but with a early August projected opening there isn’t much room for change now.
